I’ve included some old family favorite comfort foods like Creamed Chicken that has been passed down since before my grandmother, Verna Leininger, who originally opened Delaware Chicken Farm in 1951. The Easy Chicken Divan I started making in college from a recipe my roommate shared. I took freezer wrapped chicken cutlets & boneless breasts to college with me because I had never eaten chicken that wasn’t from here in my life. Me and my roommates always ate well.
Couscous & Pine Nuts, Rotisserie Chicken w/ Pasta & Parmesan & the Chicken Fruit Salad are new ideas I’ve gotten from magazines, many hours of food tv watching, & my mother, Elsie Mae Carter. My daughter, Sara, who has finally discovered the joy of cooking has me ship her chicken so she can cook for her family now. Hope You Enjoy These!!
