ELSIE'S COOKBOOK

NAME OF RECIPE: 
Bar-B-Q Chicken Salad


INGREDIENTS:

1 Rotisserie Chicken-skinned & boned & Chopped into

bite size pieces

1/4 Cup Bar-B-Q sauce

2 Tbsp Apple cider vinegar

1 Tbsp Olive Oil

1 Bag Romaine Lettuce or Mixed Greens

1 Cup Fresh or frozen corn niblets

1 Cup Grape tomatoes cut in half

1 Can Black or red beans, rinsed & drained

1 Hot or mild pepper, minced

INSTRUCTIONS:

Whisk together Bar B Q Sauce, Water & Vinegar
 

Slowly whisk in olive oil.

Toss lettuce with 1/2 dressing and place on serving platter.

Arrange chicken pieces, corn tomatoes & beans on top of lettuce.

Sprinkle with minced hot pepper & drizzle remaining dressing over top
